A simple roasted cauliflower recipe that makes a great side. The cauliflower gets precooked in the microwave before roasting.

Recipe Ingredients

  • 1 (3 pound) cauliflower
  • ¼ cup water
  • ¾ cup mayonnaise
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh chives

Cooking Directions

  1. 1 Cut leaves and bottom core off cauliflower. Place in a shallow microwave-safe baking dish and add about 1 inch of water.
  2. 2 Microwave on high for 8 minutes. Drain.
  3. 3 Combine mayonnaise, Parmesan cheese, and garlic in a bowl. Spread onto the cauliflower.
  4. 4 Bake cauliflower in the preheated oven until tender and golden brown, 15 to 20 minutes. Sprinkle with chives.

  3. Well this recipe amazed me! I wish I could give it more stars. I didn’t change a thing! The presentation was unique, the cauliflower was tender, and the topping transformed what can be a mild vegetable into a star dish of the meal. We gobbled this up and can’t wait to make it again!

  5. I didn't have any fresh garlic, so I used Garlic powder. I omitted the chives, because again I didn't have any. This is by far the best cauliflower dish I have had. It's so creamy, tender, and easy to make. This is a keeper for sure!

  7. fantastic, cook at least 40 mins at 400, then a few minutes under broiler. Bake on cookie sheet to get bottom edges brown. Do not use glass pan from micro wave
