Recipe Ingredients

  • 8 cheese tortellinis
  • 8 slices thinly sliced salami
  • 8 sprigs fresh flat-leaf parsley
  • 2 artichoke hearts, quartered
  • 4 grape tomatoes, halved
  • 8 (1 inch) cubes fresh mozzarella cheese
  • 4 pitted black olives, halved
  • 8 bamboo toothpicks

Cooking Directions

  1. 1 Bring a small pot of lightly salted water to a boil. Cook tortellini in the boiling water until pasta floats to the top, 1 to 2 minutes; drain.
  2. 2 Thread 1 tortellini, 1 salami slice, 1 sprig parsley, 1 artichoke heart quarter, 1 tomato half, 1 mozzarella cheese cube, and 1 olive half, respectively, onto a toothpick. Repeat threading with remaining toothpicks.

  1. Guests gobbled these up! I assembled the night before and placed in a large baking dish and covered in Newman’s light balsamic to marinate overnight. Perfect for a buffet, easy and delicious!
  2. These were SO delicious! I think you're right about marinating the tortillini - they simply sang with flavor. Used the Fabulous Greek salad dressing mix (already had on hand) for marinade. These were great with sliced pepperoncini as well. Thanks so much for recipe.
  3. I have made this recipe. One hint: cook pasta as directed. Marinate several hours (up to overnight) in Italian dressing. Also, add artichokes to marinade if purchased plain). Thread as directed.
