A peaches and cream pie served with a raspberry sauce. For special occasions, garnish with fresh mint leaves. Quick and easy to make and very yummy as well!!

Recipe Ingredients

  • 1 (9 inch) pie crust, baked
  • 2 (8 ounce) packages cream cheese, softened
  • ¼ cup white sugar
  • ½ teaspoon vanilla extract
  • 2 cups sliced peaches, drained
  • ¼ cup raspberry preserves
  • 1 teaspoon lemon juice

Cooking Directions

  1. 1 Combine softened cream cheese, sugar, and vanilla extract in a medium mixing bowl. Mix until smooth. Spread onto bottom of baked pie shell. Chill several hours or overnight.
  2. 2 Before serving, top cream cheese layer with drained peach slices. Mix raspberry preserves with lemon juice until well combined. Spoon over peaches. Garnish with mint sprigs.

  5. Absolutely delicious. First pie I ever made, and I cannot get enough of it! I made this with a French Pastry Crust ( recipe on this site) that was sweet and rich with flavor, and it only made the Peach Surprise that more amazing. Highly recommended on both recipes that love flavorful food.

  7. This was a fantastic summer pie very refreshing. Next time I think I'll layer slightly differently. Perhaps half the cream cheese then half the peaches then raspberry sauce. Repeat. Also I'd use more peaches and raspberry sauce and put chopped mint mixed into the preserves and lemon juice. Thanks for the idea!

  9. This is really good and quick to make. I added more sugar and almond extract to the cream cheese mixture and omitted the preserves. It was definitely a hit!
