An incredibly easy potato dish that is tasty and filling as a main course or side dish. This is the simplest version I came up with to get the kids to eat it. But you can substitute a stronger cheese, add more veggies or meat to make it heartier.

Recipe Ingredients

  • 3 eggs, beaten
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • ¼ (5 ounce) package freshly grated Romano cheese
  • salt and pepper to taste
  • ¼ cup heavy cream
  • 1 (10 ounce) can peas, drained
  • 4 small red potatoes, peeled, thinly sliced
  • 1 teaspoon olive oil
  • 2 tablespoons butter, cubed

Cooking Directions

  1. 1 Preheat oven to 375 degrees F (190 degrees C).
  2. 2 In a mixing bowl, stir together eggs, thyme, garlic powder, cheese, salt, and pepper. Stir in cream and peas, and pour into a small round baking dish. Arrange potatoes on top of the mixture, drizzle with olive oil, and dot with cubed butter.
  3. 3 Bake, uncovered, in preheated oven for 1 hour.

  1. I made it to the recipe except that I used regular cheddar cheese and used a bit more than in the recipe. I cooked it in little individual baking dishes and served it as a side dish then sprinkled with green onion before serving. The kids loved it.
  2. I thought this was pretty good but I doctored it up quite a bit. Instead of just peas I added mixed veggies that included carrots green beans corn and peas.
