Recipe Ingredients

  • 3 egg whites
  • 1 cup white sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • 20 buttery round crackers, crushed fine
  • 1 cup chopped pecans
  • 1 (12 ounce) container frozen whipped topping, thawed

Cooking Directions

  1. 1 Beat egg whites until slightly stiff. Add sugar, vanilla, baking powder, Ritz crackers and pecans. Mix well, and pour into greased 9 inch pie plate.
  2. 2 Bake at 350 degrees F (175 degrees C) for 25 minutes exactly.
  3. 3 Allow pie to cool to room temperature, and then cover with nondairy whipped topping. Refrigerate for 2 hours before serving.

  1. I upgraded this recipe by using organic ingredients toasting the pecans first scanting the sugar and upping the vanilla to a tablespoon..
