This tangy, tasty salad is as easy as it is fresh! Everyone raves over this and begs for more! It’s perfect for a light lunch or a garden party!

Recipe Ingredients

  • 1 (10 ounce) package mixed baby greens
  • 1 pomegranate, peeled and seeds separated
  • 1 (8 ounce) package crumbled feta cheese
  • 1 lemon, zested and juiced
  • 1 teaspoon Dijon mustard
  • 3 tablespoons red wine vinegar
  • 3 tablespoons extra-virgin olive oil
  • salt and pepper to taste

Cooking Directions

  1. 1 Place the lettuce, pomegranate seeds, and feta cheese into a large mixing bowl; set aside. Whisk together the lemon juice and zest, mustard, vinegar, olive oil, salt, and pepper in a separate bowl. Pour over the salad and toss to coat. Serve immediately.

  3. This dressing is good but I did not care for it on this salad. I think it would compliment the salad to have a sweeter dressing. I will experiment with different dressings. I waited for others to voice their opinions and we all agreed with a sweet dressing this would be aces.
