This is a simple, hearty meal that my kids love!

Recipe Ingredients

  • 6 large potatoes
  • 1 (16 ounce) package kielbasa sausage, diced
  • 6 hard-boiled eggs, diced
  • ½ teaspoon ground black pepper
  • 1 (16 ounce) container sour cream
  • ¼ cup milk
  • 2 cups shredded Cheddar cheese

Cooking Directions

  1. 1 Place potatoes into a large pot of salted water; bring to a boil, reduce heat to medium-low, and simmer just until tender, about 20 minutes. Drain potatoes, transfer to a plate, and refrigerate until cool enough to touch.
  2. 2 Preheat oven to 350 degrees F (175 degrees C).
  3. 3 Dice cooled potatoes. Spread potatoes into the bottom of a 13x8-inch cake pan; top with diced kielbasa and diced egg. Season mixture with pepper.
  4. 4 Stir sour cream and milk together in a bowl and pour over the ingredients in the cake pan. Sprinkle Cheddar cheese over sour cream layer.
  5. 5 Bake in preheated oven until the cheese is melted and the casserole is hot in the middle, about 30 minutes.

  1. My only suggestion is to add onions. If not it's still awesome without it. We used some of the leftovers to make omelets!! Yumm!!
  2. Great recipe. I added extra cheddar cheese but that s all. The dis was empty at the end of the meal and that s all that matters. Loved it
  3. I made few changes and additions: 1st I grilled the Kielbasa until the casing was dark after baking I put the dish in the broiler to slightly burn the cheese. Then I garnished the dish with green onions. Delish.
  4. Ok as a base recipe. I added shredded cabbage (per someone else's suggestion) and used hash browns as the bottom layer because it's what we had on hand. Husband liked it (specifically the sour cream and cheese combo) but I felt it was missing something. I think adding some green onion or sautéed red bell - Read more ...
  5. My husband loved it!
  6. I actually made a few changes according to what I had available. I layered frozen hash browns on the bottom topped that with shredded cabbage then topped that with the kielbasa chopped onion garlic powder salt and pepper a little bit of cream and then covered it with shredded cheddar. Baked at 350 for 20 - Read more ...
  7. I made this just as the recipe said. I think it needed a little salt but otherwise thought it was very good.
  8. I changed it up a bit. I seared the kielbasa in a skillet first. On high for about 7 minutes with sage, rosemary, thyme, garlic powder, salt and pepper. Just a dash of each. Once the kielbasa was crispy I set it aside. I drizzled melted butter over the potatoes with a dash of salt - Read more ...
  9. made as written I found this to be very bland
