This recipe is fast using the blender to mix ingredients. Pancakes come out fluffy and flavorful. Serve with warm syrup and butter. They are also excellent with warmed blueberries on top.

Recipe Ingredients

  • 2 cups milk
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 3 tablespoons baking powder
  • 2 tablespoons vegetable oil
  • 2 tablespoons white sugar
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • cooking spray

Cooking Directions

  1. 1 Combine milk, eggs, all-purpose flour, whole wheat flour, baking powder, vegetable oil, sugar, honey, vanilla extract, and salt in an electric blender; blend until smooth.
  2. 2 Place a skillet or griddle over medium heat until hot, 2 to 3 minutes. Spray with nonstick cooking spray.
  3. 3 Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

  1. Yummy pancakes. Super easy, I halved the measurements because 10 pancakes were too many.. I added pumpkin spice. As a note: half a recipe produced 10-5 in pancakes.

  7. Overall these are pretty good and a total cinch to make too! I did find them a bit too sweet for my tastes especially if you like to top your pancakes with syrup. I would probably reduce the amount of sweetener to 1 tbsp total and use only honey or sugar not both. With that - Read more ...
