This is an easy, tasty recipe. Even my Peruvian mother-in-law enjoyed it.

Recipe Ingredients

  • ½ cup crushed dry-roasted, salted peanuts
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon salt-free herb seasoning blend
  • 6 chicken thighs, skinned
  • ½ cup melted butter

Cooking Directions

  1. 1 Preheat oven to 375 degrees F (190 degrees C).
  2. 2 In a shallow bowl, mix the peanuts, garlic powder, onion powder, and salt-free herb seasoning blend.
  3. 3 Dip the chicken thighs in the melted butter, then press into the peanuts to coat. Arrange on a baking sheet.
  4. 4 Bake 45 minutes in the preheated oven, or until chicken juices run clear.

  1. Peanuts just didn't stick on needed some more flavor.
  2. It is a good start to a recipe. It needs more flavor so I will tweak it next time.
  3. I used breasts instead of thighs but other than that I made as written. I didn't care for the texture of this and the peanuts did not salt the chicken enough even though there is a ton of sodium in them. This baked up nicely but it is not something I'd make again. Sorry.
  4. We thought this recipe was tasty. Will probably add soy sauce next time to add a little more salt. Perfect recipe for a low-carb diet!
  5. I didn't have much appetite for dinner so I made this just for Husband. I thought it looked and smelled great but he was kinda meh about it. This was definitely quick and easy but I won't be making it again. Thanks anyway!
  6. This was pretty good. I did make add a few things to give it more flavor but that's pretty normal for me.   7. This recipe was nasty. The peanuts did not go well with the other ingrediants. Keep peanuts away from this!
