It is a great next day, leftover user breakfast that is hearty and fast! My brother came up with this recipe and it has become a breakfast mainstay when we get together! Serve with bacon, toast and fruit. Yummy!

Recipe Ingredients

  • 5 eggs, beaten
  • 2 tablespoons milk
  • 1 onion, chopped
  • 2 slices cooked ham, chopped
  • 1 cup shredded Cheddar cheese
  • 1 to taste salt and pepper to taste
  • ⅓ teaspoon garlic powder, or to taste
  • 2 ½ tablespoons butter

Cooking Directions

  1. 1 In a large bowl, beat together eggs and milk. Stir in onion, ham, cheese, salt, pepper and garlic powder.
  2. 2 Melt butter in a large frying pan or skillet over medium high heat. Add eggs and cook, without stirring, until eggs begin to set. At that point, stir the eggs until roughly scrambled. Keep doing this until eggs are fully cooked, about 10 to 15 minutes. Serve warm.

  1. add bell pepper; mushrooms cayenne powder. Cook before adding egg mixture. Update used sausage fantastic next time no salt if using sausage.

  3. I threw in a large chopped organic red pepper and used fresh minced garlic instead of garlic powder. This was great as a quick breakfast. The boys had this with last night's leftover cornbread.
  4. This is really great to use left over lunch meat. Have also made it with Bologna and American cheese!
  5. Delicious breakfast! I usually melt the butter and fry the onions a bit then add the egg mixture. Don't over scramble or they become rubbery. This is great with toast orange juice and a bit of bacon on the side.
  6. Tasty combination. Added diced green pepper and used frozen diced onions as a timesaver. I do think the timing is off a bit because eggs shouldn't have to be cooked for 10-15 minutes as the recipe stated. Mine were done in a just a couple of minutes.

  8. Very tasty! I combined the ingredients the night before so it was ready to toss into the frying pan after church the next day. I would make it again & again!
  9. This recipe was fantastic! My usually picky son finished his before my wife and I and looked in the pan to see if there was anymore.
