I tried this easy, no-bake cookie recipe for the first time last Christmas and they were a big hit. Simple to make and very yummy!

Recipe Ingredients

  • 3 cups vanilla wafer crumbs
  • ½ cup ground pecans
  • 3 tablespoons cocoa
  • 1 cup confectioners' sugar
  • 3 tablespoons light corn syrup
  • ⅓ cup water
  • 2 teaspoons rum flavored extract
  • ¼ cup confectioners' sugar

Cooking Directions

  1. 1 In a medium bowl, mix vanilla wafer crumbs, ground pecans, cocoa, 1 cup confectioners' sugar, corn syrup, water, and rum flavoring together.
  2. 2 Roll mixture into 1 inch balls, and then roll in remaining confectioners' sugar. Store, covered, about a week before serving.

  2. I used all rum instead of the water and rum extract. Excellent!! If you do choose to use rum make sure it's a good quality. No cheaping out!
  3. Used 1/4 cup dark rum instead of extract. They were wonderful!

  7. This is almost exactly like my mother's recipe from the gas company cookbook. Except, what's with the 'rum extract'? Too politically correct for me! Mine calls for 3 tbls of real rum. In fact, I recall my mom sprinkling more rum on days later. She said the longer they sat, the better they were!!!
  9. Great recipe. I made these for Christmas to put into tins and give away. They are alot better as they sit for a while. I used less cocoa powder. Only about 1 T. It's all that I had. They still tasted great.
