Cauliflower in a creamy cheese sauce is a perfect keto recipe and delicious to boot! Make sure you season well with salt and pepper (nutmeg tastes great as well) otherwise it will taste too bland.

Recipe Ingredients

  • ½ head cauliflower florets
  • 1 cup shredded Cheddar cheese
  • ½ cup heavy cream
  • 1 pinch salt and freshly ground black pepper to taste

Cooking Directions

  1. 1 Preheat the oven to 400 degrees F (200 degrees C).
  2. 2 Bring a large pot of slightly salted water to a boil and cook cauliflower until tender but firm to the bite, about 10 minutes. Drain.
  3. 3 Combine Cheddar cheese, cream, salt, and pepper in a large bowl. Arrange cauliflower in a casserole dish and cover with cheese mixture.
  4. 4 Bake in the preheated oven until cheese is bubbly and golden brown, about 25 minutes.

Feel free to use other types of cheeses. I often use up whatever I have sitting around in the fridge.

  6. I drizzled cauliflower with olive oil and broil it on low to dry out the cauliflower and proceeded with recipe. If you are looking for a creamier sauce try adding 4 oz of cream cheese to the mix.
  7. Delicious definitely a keeper. I added some dehydrated onion flakes, Cajun seasoning and garlic powder to flavour it up a notch.   8. Great flavor, my cheese and cream did not meld together to make a sauce though. Next time I will heat the cream and cheese in my Pyrex pan to make a quick sauce, then toss in the cauliflower and bake.
