Fresh herbs, garlic, and Parmesan cheese skillet-roasted with cauliflower.

Recipe Ingredients

  • 3 tablespoons olive oil
  • 1 small sweet onion, sliced
  • salt to taste
  • 4 cloves garlic, chopped
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley
  • 1 head cauliflower, broken into florets
  • ½ cup freshly grated Parmesan cheese

Cooking Directions

  1. 1 Preheat the oven to 425 degrees F (220 degrees C).
  2. 2 Heat olive oil in a skillet over medium heat. Add onion and salt. Cook for 15 minutes; add garlic, basil, thyme, and parsley. Add cauliflower and toss together.
  3. 3 Place skillet in preheated oven and roast for 35 minutes, stirring halfway through roasting time.
  4. 4 Sprinkle cauliflower with Parmesan cheese and serve.

  1. We enjoyed this recipe. We sauteed the onions in a cast iron pan out on the grill. I did add some mushrooms toward the end. My only change would be to sautee the onions less time then continue cooking with the spices and cauliflower. I added two extra cloves of garlic. All was grilled outside - Read more ...
  2. We ended up using a large cauliflower so I doubled all of the spices. It wasn't amazingly flavorful largely because you're using cauliflower as a base but it was quite good!
