Spanish Omelet

Our Spanish Omelet gets mucho flavor from smoked ham, VELVEETA, garlic and chopped fresh cilantro.

Recipe Ingredients

  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • ¼ cup KRAFT Zesty Italian Dressing
  • 1 pound red potatoes, cooked, finely chopped
  • 1 (6 ounce) package OSCAR MAYER Smoked Ham, chopped
  • 6 large eggs eggs
  • ½ cup milk
  • ¼ pound VELVEETA®, cut into 1/2-inch cubes
  • ½ cup chopped fresh cilantro

Cooking Directions

  1. 1 Heat oven to 350 degrees F.
  2. 2 Cook peppers, onions and garlic in dressing in 10-inch ovenproof skillet on medium heat 5 min., stirring frequently. Add potatoes; cook 5 min., stirring frequently. Remove from heat. Spread potato mixture to evenly cover bottom of skillet; top with ham.
  3. 3 Whisk eggs and milk until blended; pour over ham. Top with VELVEETA.
  4. 4 Bake 30 min. or until center is set. Sprinkle with cilantro.

Chef's Notes

Serve topped with BREAKSTONE'S or KNUDSEN Sour Cream, or TACO BELL(R) Thick & Chunky Salsa; If you don't have an ovenproof skillet, wrap the handle of your regular skillet with several layers of foil before using as directed. Remember that all parts of the skillet will be hot when removing it from the oven.


  1. A really good breakfast idea! After a ham dinner with scallop potatoes I made this.. very easy and delicious!! Thank you, will certainly make again!
  2. I thought the flavors were too contrasting. It was zesty from the Italian dressing and then cheesy from the Velveeta. I would make this without the dressing imho.
  3. I've made this 3 times. It's a great tastey meal. I've made it with bacon when I didn't have ham. Wasn't quite as good but it work and was good.
  4. This is really delicious! I was dubious at first of the Zesty Italian dressing but it is actually a perfect complement to the flavors of the onions peppers cheese etc. I used an iron skillet but you could probably do this with a regular casserole dish as well.
