These marvelous vegetarian fritters are fresh and almost sweet — and oh, so fun to make! Serve them hot with salt, plum sauce, or honey.

Recipe Ingredients

  • 1 head broccoli, diced
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 6 extra large eggs, beaten
  • ½ cup grated Parmesan cheese
  • 2 cups cornmeal
  • ground black pepper to taste
  • oil for frying

Cooking Directions

  1. 1 In a large bowl combine broccoli, garlic, onion and eggs; mix well. Stir in Parmesan and cornmeal; mix well. Form into patties. If mixture is too dry, add another egg; if too wet, add more cornmeal. Season with pepper to taste.
  2. 2 Heat 1 inch of oil in a large, deep skillet. Place patties in hot oil; cook, turning once, until well browned on each side.

We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount may vary depending on cook time and temperature, ingredient density, and the specific type of oil used.


  1. easy and very satisfying
  2. I did make a change and used a combo of flour and Panko because I didn't have cornmeal. That's why the 3 stars. Not sure if that was it but they were dry and not what I expected at all.
  3. Just okay. I added some salt and some flour too because the cornmeal alone wasn't binding the way I wanted it to. I used frozen broccoli and thawed and strained it first. I served them with spicy ketchup.
  4. I don't like all the grease but if you ad three more eggs you can cook it as a quiche-type-thing in the oven. Just remember to grease the pan.
  5. These were very dry. I made them again with seasoned bread crumbs and about a tablespoon of butter to moisten the bread crumbs. The cornmeal made it too dry. I also added some shreded cheddar cheese.
  6. I added a package of dry ranch mix. They were pretty good!
  7. This recipe just did turn out all that great. The fritters were really bland. I may make this again and try to modify it...
