Quick and easy guacamole that’s egg-based! Summertime or a Super Bowl® favorite! Taste guacamole with tortilla chip before adding salt, chips will bring out the flavor.

Recipe Ingredients

  • 2 avocados - peeled, pitted, and mashed
  • 3 hard-boiled eggs
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon pepper
  • 1 pinch salt to taste

Cooking Directions

  1. 1 Mash avocado and hard-boiled eggs together in a bowl until evenly combined. Stir in lemon juice and lemon pepper. Season with salt.

If not serving immediately, put avocado pit in middle of dip, cover, and refrigerate until needed.

  1. The lemon juice was a bit too much since it overpowered the taste. I will put in on a romaine salad with croutons with a touch of balsalmic instead of throwing it away. Its a good combo of protein and good fats but I won't make again.
  2. Our family eats it like this but we add the hard boiled egg last so that it is not totally mushy.
  3. This is a great alternative to plain jane egg salad sandwiches. I followed the recipe and was delighted with the favor. Personally I used tortilla bread and made a wrap. Don't fill to much it was bursting out the other end. Great for a quick sandwich or with chips. Thanks
