A yummy strawberry quick bread for bread machines.

Recipe Ingredients

  • 1 (10 ounce) package frozen sweetened strawberries, thawed
  • ½ cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • 1 cup white sugar
  • 1 ½ cups all-purpose flour
  • ½ cup chopped pecans

Cooking Directions

  1. 1 Drain the strawberries, reserving 1/4 cup of the juice. In a large mixing bowl stir together the oil, eggs, baking soda, baking powder, cinnamon, sugar and flour. Fold in the pecans, strawberries and 1/4 cup of their juice. Pour the mixture into your bread machine pan and place it in the machine. Select the Quick Bread cycle and press Start.
  2. 2 Remove pan from bread maker and let cool completely before removing bread from pan.

  3. This bread has quickly become a regular recipe in our house. My husband loves it! I have served it plain, heated with a little butter, and with ice cream and strawberry sauce. It is very versitile!
  4. I tried to cheat and use fresh strawberries which didn't work at all. The whole loaf turned into a purple-gray color and the middle didn't cook at all-- it was the consistancy of a thick pudding. I had to scrape it out of my breadmaker. I guess next time I'll have to follow the directions!;)
