This dish incorporates a lot of what I love; crunchy sugar snap peas, assorted veggies, and a creamy dressing. A sweet and satisfying side dish!

Recipe Ingredients

  • 1 (8 ounce) package sugar snap peas
  • 1 cup halved cherry tomatoes
  • ½ cup grated carrots
  • ¼ red onion, chopped
  • ⅓ cup mayonnaise
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried parsley
  • ¼ teaspoon dried rosemary
  • 1 pinch salt and pepper

Cooking Directions

  1. 1 Snap large pea pods in half, and place peas in a salad bowl with cherry tomatoes, carrots, red onion, mayonnaise, Parmesan cheese, oregano, parsley, rosemary, salt, and pepper. Gently toss to combine all ingredients and coat with dressing, and refrigerate salad for at least 1 hour before serving.

Chef's Notes

If you do not have the assorted seasonings, simply use an Italian seasoning blend. Add or subtract veggies to your taste. Sugar can be added in with the mayonnaise for a sweeter dressing.

  9. People asked for the recipe when I served this. Loved the flavors and the textures. I sliced the snap peas diagonally instead of snapping them in half.The salad kept it's crunch for several days and was great served as leftovers.
