Make a day ahead with French lentils and allow flavors to develop.

Recipe Ingredients

  • 4 cups water
  • 1 cup French lentils
  • ½ teaspoon table salt
  • 1 pound tomatoes, cored and diced
  • 6 stalks green onion, chopped
  • ½ cup chopped red or yellow bell pepper
  • ¼ cup minced red onion
  • ¼ cup chopped fresh dill
  • ¼ cup chopped fresh basil
  • ¼ cup olive oil
  • 3 tablespoons red wine vinegar
  • ½ teaspoon kosher salt
  • 1 pinch freshly ground black pepper

Cooking Directions

  1. 1 Bring water, lentils, and table salt to a boil in a medium saucepan over medium-high heat. Reduce heat and simmer, stirring occasionally, until lentils are fully cooked, 20 to 30 minutes. Drain.
  2. 2 While the lentils are cooking, combine tomatoes, green onion, bell pepper, red onion, dill, basil, olive oil, vinegar, kosher salt, and pepper in a large bowl.
  3. 3 Drain lentils. Add hot lentils to the tomato mixture and stir to combine. Serve immediately, or refrigerate for 24 hours to allow flavors to develop.
