Vegetarian Slow Cooker Meal

Great vegetarian crock pot recipe from my mom. Ground turkey or grilled chicken added to the finished product are great additions for meat lovers. Italian-style diced tomatoes can also be added.

Recipe Ingredients

  • 1 (32 fluid ounce) container vegetable broth
  • 1 (16 ounce) package frozen cheese-filled tortellini
  • 1 (8 ounce) package cream cheese, cut into pieces
  • 1 (8 ounce) package fresh spinach
  • 1 cup sliced crimini ('baby bella') mushrooms

Cooking Directions

  1. 1 Stir vegetable broth, tortellini, cream cheese, spinach, and mushrooms together in a slow cooker.
  2. 2 Cook on Low for 5 to 6 hours.

  3. I added a little salt,black pepper and a tiny dash cayenne. A little seasoning make a bid differance.
  4. It was way to liquidity. I followed directions completely. Next time I will not use as much vegetable broth. The taste was great although I'm sure in its full creamy state it would be really tasty.
  5. Thanks to everyone's comments on this recipe I couldn't wait to make it and I totally loved it! Also it was super cheap to make. I'm not a big fan of vege broth so instead I substituted a can of tomato soup. Yum yum yummy!

  7. When I opened my slow cooker the dish looked disgusting and it didn't taste too great either. The spinach sat on top the cream cheese clumped and the totrellini got mushy.
  8. We all enjoyed it. I think the next time I make it I will add the spinach closer to the middle or end of the total cooking time.
