For banana spice muffins - add 2 medium bananas (mashed), 1/2 teaspoon nutmeg, 1 teaspoon vanilla extract. For maple muffins - add 1/3 cup maple syrup or 1 teaspoon maple extract (syrup makes a moister muffin).
